  1. Toss the squash in a bowl with 2 tablespoons olive oil and kosher salt. Roast in a 400° oven for 20 minutes. In a salad bowl toss squash, lettuces, cheese, almonds, raisins, olive oil and vinegar. Season with salt and serve while squash is still warm.

Sweet and Sour Tomatoes
  1. Put tomatoes, green onions and cilantro in a bowl and set aside.
  2. Heat olive oil in a sauce pan.
  3. Add spice mixture and heat until bubbly, about 2 minutes.
  4. Slowly add honey and rice vinegar.
  5. Cook for 3 more minutes or until a little thick and gooey.
  6. Pour mixture over tomatoes, cilantro and green onions.
  7. Season with salt and let sit for about 5 minutes before using.
Spice Mixture
  1. Place all spices in a dry, non stick sauté pan.
  2. Turn temperature to medium high heat and toast the spices until the seeds begin to pop and the pan is lightly smoking.
  3. This should be extremely fragrant at this point. Do not burn the spices.
  4. Remove from heat and let cool.
  5. Grind all together in a coffee grinder.
  6. Store in a tightly covered jar in a dark place.

  4. Put enough oil in a frying pan to grease well.
  5. Fry the fritters a few at a time until golden on each side.

1 tablespoon of baking soda
2 teaspoons of freshly grated nutmeg
2 ¼ cups sugar

1 cup melted butter
2/3 cup whiskey or brandy
2 ½ cups persimmon puree
1 cup chopped walnuts
1 cup cranberries

  1. Butter and flour either 2 regular sized loaf pans or 6 small size loaf pans. Preheat oven to 350°.
  2. Sift together flour, salt, baking soda, nutmeg and sugar.
  3. Make a well in the dry ingredients and stir in melted butter, whiskey/brandy, persimmon puree, walnuts and cranberries.
  4. Bake 45 minutes to an hour testing for doneness with a pick.
