Instructions
  1. Toss the squash in a bowl with 2 tablespoons olive oil and kosher salt. Roast in a 400° oven for 20 minutes. In a salad bowl toss squash, lettuces, cheese, almonds, raisins, olive oil and vinegar. Season with salt and serve while squash is still warm.

  1. Mix flour, powder and salt in a bowl.
  2. Make a well in the center and put eggs, oil and milk in center.
  3. Whisk together and add corn and herbs.
  4. Put enough oil in a frying pan to grease well.
  5. Fry the fritters a few at a time until golden on each side.
Recipe Notes

Goes perfectly with Sweet and Sour Tomatoes.

2 pounds asparagus ends trimmed
2 tablespoons olive oil
Kosher salt
1 to 2 tablespoons balsamic vinegar
1 small piece of Reggiano parmesana (use a vegetable peeler to shave ½ cup)

  1. Toss asparagus in a bowl with olive oil and salt to coat.
  2. Grill on low heat on a gas grill or on the low temperature end of a charcoal grill.
  3. Grill until the outside skin begins to blister and turn bright green.
  4. Remove from heat and place on a platter.
  5. Shave cheese on and sprinkle with balsamic and a little more salt to taste.
