Recipes


Warm Brussels Sprout Salad w/ Pancetta and Hard Cooked Egg


1 pound fresh Brussels sprouts, quartered
1 bunch green onions, sliced
1/2 cup cooked and crumbled pancetta
3 hard cooked eggs, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons Dijon mustard
3 tablespoons seasoned rice vinegar
2 tablespoons honey
2 tablespoons olive oil
Salt and pepper to taste

Place sprouts, pancetta, eggs, scallions and thyme in salad bowl. Heat oil, mustard, vinegar and honey in a sautee pan and whisk together. Bring to a simmer and pour over salad. Toss, season with salt and pepper and serve immediately.

Brussels Sprout Salad w/ Pancetta and Cranberries


1 1/2 cup diced pancetta
2 lbs fresh Brussels sprouts, leaves separated
3 tbls shallots, finely diced
1 clove garlic, minced
1/4 cup raisins
2 tbls balsamic vinegar
1/4 cup chicken stock
Salt and pepper to taste

In skillet add olive oil and pancetta till crispy.
Add garlic shallots, raisins & sprouts separated, add vinegar and stock
Cook until wilted 3-4 minutes
Season with salt & pepper.

Rice That Tastes Like Love


riceWhat could be better with all the colorful vegetables at the farmers' market than locally grown organic brown rice? If brown rice sounds dull to you, think again! You won't believe the rich nutty taste of the whole grain brown rice that Massa Organics brings to the Walnut Creek market from their family farm near Chico. You can literally taste the care they put into every aspect of the production of their rice.

Rice is a healthy choice for nearly everyone. It is gluten-free, high-fiber, low cholesterol, rich in minerals, and non-allergenic. Its natural compatibility with our bodies is the reason it is the recommended first solid food for babies. Whole grain brown rice, which hasn't been processed and polished like white rice, is packed with good stuff that actually tastes wonderful as well when it is as fresh and wholesome as what you find at our market. NEWS & EVENTS
Child Nutrition Act: Slow Food USA is heading a letter-writing campaign, "Time for Lunch" to show support for revamping the Child Nutrition Act, which is set to be reviewed by Congress this Spring. The campaign encourages children, parents, educators- anyone who would like to see more wholesome food and fresh fruits and veggies served in K-12 school cafeterias across the country by writing a letter to Congress. Voice your opinion. Letters should be mailed in the beginning of February.

What's Abundant?

Cold winter weather means delightful and tasty Winter Vegetables are thriving and abundant at the market. Broccoli is bursting with flavor this time of year and grows well in a cold climate. High in Vitamins A, C, and D, Broccoli is perfect to steam, sauté, stir fry or eat raw!

Greens (Collards, Kale, Swiss chard) are yummy leaves often overlooked yet are rich in vitamins and full of flavor. The variety of colors of Swiss chard and the variation of Kale such as Lacinato, known as "dinosaur kale" because of its bumpy leaves and Red Russian Kale with hues of purple and forest green adds uniqueness to the dinner table and to your palate.

Greens sautéed or steamed are wonderful over any grain, including couscous, rice, quinoa, and pasta or as a side dish.

Greens are easy to cook.

Savory Greens:

8-12 leaves of Greens
1-2 cloves garlic
2-3 green onions
Olive oil or butter (your choice)

Rinse leaves, roll leaves lengthwise and then cut horizontally in slender ribbons.

Heat butter or olive oil over medium heat in a sauce pan. And add garlic and green onions and sauté for a few minutes. Add greens to pan and stir occasionally. Greens are ready when slightly wilted. Serves 3-4.

Steam: Add greens to sauce pan, and a few tablespoons to ¼ cup of water depending on the amount of greens. Cover on low heat and stir occasionally for 3-5 minutes. Greens are ready when slightly wilted.
Add rice vinegar, soy sauce or your favorite sauce for more flavor.

Pleasant Hill was the cradle of the CCCFM local food movement, which began in 1982 by Master Gardeners with a vision. CCCFM will no longer be operating the Pleasant Hill Farmers' Market.
