From Chef Lesley Stiles:
This is a lovely salad that showcases amazing winter citrus with equally amazing winter beets. Feel free to choose yellow or golden beets, Chioggia or wonderful old red. A combo is stellar. Serve salad with nice crusty bread as a foil for the goat cheese in the salad.
Roasted Beet and Orange Salad
4 medium sized beets
1 Cara Cara orange
1 blood orange
1 navel orange
3 tablespoons olive oil
2 tablespoons seasoned rice vinegar
1/4 cup crumbled chevre or feta
3 cups assorted salad greens
Salt and pepper to taste
Wash beets and remove stem end and root tail. Rub with 1 tablespoon of the olive oil and season with salt and pepper. Place in baking dish, cover and roast at 350 degrees for about 45 minutes to an hour until beets are easily pierced with a knife. Let cool until you can easily handle them. Peel, quarter and slice the quarters about 1/4 inch thick.
Peel and slice the oranges. Place greens in a bowl. Toss in the beets, oranges and goat cheese. Drizzle remaining olive oil and rice vinegar over. Season with salt and pepper and gently toss to mix all.
Serves 4.

From Keith Farley, Manager:
Have you been to "Locustville" yet? Wow,
what a change. We all had our doubts about the
new location and all of those doubts have been proven
false. The Locust location is fantastic. Everyone
I have spoken to has overwhelmingly given us the thumbs
up. Although the rain has dampened the past few
weeks, the number of shoppers has been constant. I
am looking forward to spring and the arrival of cherries.
Speaking
of spring, the first sign of spring to me is the arrival
of asparagus in the market and we should see the first
stalks in the next few weeks. Come down and join
us for the new Walnut Creek farmers' market it
is an exciting time.

FROM
OUR MARKETS by
Chef Lesley Stiles |
Even with mercury dipping lower there are hordes of folks getting
their farmers' market fix at the new location. Once you are
in the habit of the farmers' market produce, regular and not
so regular customers are proving to themselves, you can't go
back. Winter is no hindrance to variety of fruits and vegetables in
Northern California and we do reap the benefits.
Asian greens are screaming to be sliced up and sauteed with winter garlic
and olive oil with a few chili flakes thrown in the ward off outside chills.
Also amazing thrown into a pot of soup or stew at the end to beef up flavor as
well as nutrients to ward off what ails you.
Citrus are raging at the market.
You can find any number of sweet to tart inside and out multi colored globes
right now. Copious amounts of zipper skinned Satsuma are pushing forward to get
into those lunches while pink tinged Cara Cara are right up there with blood
oranges in tropical flavor nuances. Tangelos are a sweet cross between a tangerine
and pommelo and are rapidly moving up the popularity line. Lemons,
limes, grapefruits etcetera, you can find at almost every stand at the market. Sliced with super
sweet kiwi into a bowl adorning cereal, yogurt, pound cake or naked by themselves
your taste buds will be happily singing thanks to you.
February is the month of hearts, whether it be love or health, or both, do your
heart a favor and purchase your mind, spirit and body loving locally grown, intensely
flavored, fruits and vegetables from the Walnut Creek Farmers' market
utilizing the location with the best variety while supporting the hearts and
minds of a small family farm.
Now that the rain has subsided, bundle up and get out into our amazing Bay Area
winter and show your heart how much you love it!
