Roasted Tomato and Red Pepper Soup
Servings: 8
- Serving Size: 4 oz
Ingredients:
2 lb. Fresh tomatoes
3/4 lb. Red bell peppers
2T good olive oil
A few pinches of red pepper flakes
2 cups Diced onion
1 large carrot, diced
3 cups water or sodium free vegetable broth
2 tsp. Balsamic Vinegar
Salt and fresh ground black pepper to taste
Garnish ideas: Fat free yogurt, Siracha sauce, chopped fresh herbs, finely diced croutons
Preheat oven to 400 degrees.
Toss the whole tomatoes and peppers in 1T of the olive oil and place on a cookie sheet. Place in preheated oven and roast for 30-40 minutes until skin is shriveled and slightly browned. Vegetables will lose their shape and look wrinkled but that’s OK. Set aside when roasted. When cool enough to handle, remove any of the skin from the peppers and remove the seeds and stems. Remove any of the skin from the tomatoes that comes off easily. Cut the peppers and tomatoes coarsely being careful not to lose the juice.
While the vegetables are roasting heat a soup pot and add the remaining 1 T. olive oil. Sautee the onions and carrots on low heat until translucent (about 10 minutes), stirring frequently. Add the chili flakes and pureed garlic and sauté 3 minutes longer, being careful not to brown the garlic.
Add the chopped tomatoes and peppers to the pot, and stir to sauté slightly. Add the water or vegetable stock and simmer for 1 hour.
Puree the soup in a blender or robot coupe. Add the Balsamic vinegar and season to taste with salt and pepper.
Use any combination of garnish ideas or simply serve as is.

Lafayette Farmers' Market a Resounding Success!
Thanks to all who came out to support the 3-week trial of the Lafayette Farmers' Market, whether by shopping, volunteering, or spreading the word. We had an unbelievable amount of enthusiasm and the farmers did very well. We hope to come back for the full season next year, May to November, but we still need your help! Make it known that you want a Thursday night market in Lafayette by calling or emailing your city council representatives (Joanne Robbins, City Clerk: (925) 299-3210; cityhall@lovelafayette.org) and attend the public council meeting on November 9 to vote for sustainable food in your town.

Call for Volunteers to Work on Backyard Farms in Lafayette

The nonprofit organization The Urban Farmers has raised the money to build and maintain one hundred small food gardens for residents in the Lafayette area.
Now they need volunteers to help them plant cover crops this fall and winter and food crops this spring.
