Roasted Tomatoes
by CCCFM customer Marlene Altman:

Preheat oven to 300 degrees. Put some olive oil to coat the bottom of a roasting pan or shallow pan with sides. Roast as many tomatoes as will fit, cut into quarters or leave whole if cherry or pear shaped. Roma or meaty tomatoes work best but any will do. When the tomatoes are starting to turn brown and look roasted and dried, several hours later (probably 3 or so), they are done. If you're in a hurry put it in a faster oven for less time (500 degrees for about 20 minutes, 400 degrees for an hour or so). Excellent as is over toasted bread slices to make bruschetta or over pasta with cheese sprinkled over. Can add chicken and a little wine if desired with the pasta. Will keep in the fridge for 2 weeks or the freezer thru the winter to have a memory of summer months! It really brings out the sweetness of the tomatoes – you won’t believe how good they can be!

FALL'S FAVORITE FIFTEEN

Fall markets still have plenty to offer, so check out FALL’S FAVORITE FIFTEEN at the FARMERS’ MARKETS.

Robin Pastor from Smith Farms in Knightsen is still selling her fabulous fresh picked tomatoes, including Black Russian, Brandywine, Gold Jubilee and Green Zebra along with the favorite, rich tasting Big Beef.

Visit Felipe at the Rubalcaba Nursery stand for a custom made bouquet of fresh cut flowers or choose from more than a dozen different varieties he brings from their nursery in Prunedale (Monterey County).

The information booth is a great place to find free recipes, entry cards for a free raffle and Edible East Bay magazines. There are also sturdy shopping baskets for sale.

Padron peppers are one of the new stars at the market. Dik Archer from Groundsel’s Westgarden is harvesting these mild flavored chile peppers from the 600 plants he tends in American Canyon. This is where you’re sure to find your favorite Halloween pumpkins too!

Cage free eggs are available every week. Great Valley Poultry’s white and brown eggs are sold by the dozen and half dozen.

Dry farm practices produce intense-flavored fruits like the Bartlett pears from Alhambra Valley Farms in Martinez. Choose from ready-to-eat to pears that will last the week.

Apples are the quintessential fall fruit. There are several growers who sell several varieties including Mutsu, Gala, Golden Delicious, Fuji, Jonathan and Granny Smith.

Jim McKeown from McKeown Farms brings hard-to-find quince to the markets.

Barbagelata Farms from Linden features both shelled and unshelled new harvest walnuts.

Ledesma Farms continues to offer fresh dug potatoes and a variety of peppers. White and red variety potatoes come to market with a little of the earth still hanging on, just adding to the appeal of this favorite fall-time root vegetable- add to soups, stews or salads.

Beautiful fuyu persimmons are waiting at the J & J stand – eat out of hand or slice crosswise to reveal the star shaped pattern.

Pomegranates are a fall treat. Lone Oak Farm also sells their pomegranate juice.

Enjoy and see you at the market!
