Delicious Delicata Squash Barley Soup

Prep Time: 15 minutes
Cooking Time: 1 hour

2-3 cups delicata squash, peeled and cut in squares
6 small-medium carrots, shredded
1 cup barley
handful of wakame seaweed
6-7 cups water.
1 head green cabbage, chopped
1 daikon radish, shredded
2 stalks celery, chopped
1 tsp. Dried orange peel

1. Place water in large soup pot and bring to a boil.
2. Add barley, turn down to simmer for 20 minutes.
3. Meanwhile, prepare vegetables.
4. Add vegetables after barley cooking time is done.
5. Simmer another 20 minutes.
6. Add orange peel. Turn off heat. Serve after five minutes.

Serving Size and suggestions: Serves 6.

To make dried orange peel:
Grate orange peel onto plate. Spread evenly over plate surface. Leave out to dry for a few days. Stir occasionally and spread evenly again to avoid molding. When dry, store in empty spice bottle. Lemon peel can be prepared the same way.

Variations:
Use dried lemon peel instead of orange. Try different types of winter squash instead of the delicata: butternut or kabocha would both be great. Vary grains and seaweeds for a totally different soup!
