
Kale and Lettuce Summer Salad
Dig into this nutrient-dense salad with a splash of summer flavor
Ingredients
- 1/2 bunch romaine
- 1/2 bunch curly kale
- 1/2 lemon
- Pinch of salt
- 1/2 tbs olive oil
- 5 early girl tomatoes
- 1 cubed avocado
- 1/8 cup of pumpkin seeds or nut of your choice
- Freshly grated parmesan cheese on top to taste
Instructions
- Massage the cut curly kale with lemon, salt and olive oil for about 30-60 seconds.
- Combine remaining ingredients.
