Oat Crisp Stuffed Pears

Make the most of sweet pear season with these adorable individual pear crisps spiced with cinnamon and topped with a yogurt drizzle. Warm, satisfying and nourishing!

Ingredients
  

  • 3 each Ripe Bartlett pears
  • 1/2 cup Rolled oats
  • 1 tbsp Coconut or Brown sugar
  • 2 tbsp Walnuts chopped
  • 1/2 tsp Cinnamon ground
  • 1/8 tsp Nutmeg ground
  • pinch salt
  • 3 tbsp Milk of your choice
  • 1 tbsp Almond butter
  • 1 tbsp Maple syrup

Liquid in Pan

  • 1/4 cup Water
  • 1 tbsp Lemon juice
  • 1 tbsp Maple syrup

Topping

  • 1/4 cup Yogurt of your choice
  • 1 tbsp Leftover liquid in pan after baking

Instructions
 

  • Preheat oven to 350°F
  • Halve pears and use a melon baller or spoon to scrape out the stem, core and seeds, plus a small indent in the center for filling, then cut a tiny sliver off the bottom of the pear to make a flat surface.
  • Mix all dry ingredients together in a small bowl.
  • In a separate bowl, whisk together the wet ingredients, then add to the dry and stir together until combined.
  • Stuff pears with filling and place in a small baking dish.
  • Mix together water, lemon and syrup and pour on and around pears in the dish.
  • Cover and bake for 15-30 minutes (approximately 20 minutes for small pears, larger pears may take longer) until fork tender and lightly toasted on top.
  • Mix yogurt with 1 Tbsp leftover liquid from the pan, adding more to thin if needed.
  • Serve warm, drizzled with the yogurt sauce and sprinkled with extra cinnamon.
