Grilled Apricot Crostini
An easy to make summer appetizer for your next happy hour or family gathering. Crispy crostini are topped with a decadent soft cheese, sweet grilled apricots, fresh basil and a drizzle of honey.
- 1/2 baguette or other crusty bread, thinly sliced
- extra virgin olive oil
- 4 - 6 oz Soft cheese of choice (e.g. fromage blanc, ricotta, goat cheese, burrata)
- 6 small Apricots halved and pitted
- Small handful of basil leaves sliced into ribbons
- Local Honey
Heat grill pan over medium-high heat.
Drizzle bread slices with olive oil and grill 1-2 minutes per side, until lightly toasted.
Brush apricot halves with oil and grill 1-2 minutes per side, until lightly charred.
Assemble crostini: spread on spoonful of cheese, top with apricot half, drizzle with honey, season lightly with salt and pepper, and garnish with fresh basil ribbons.
